This dish is inspired by the rich, nutty flavors of Middle Eastern side dishes that highlight humble pantry staples. It brings together the earthy bite of lentils with the luxurious texture of toasted sesame paste. It is a comforting, rustic meal that easily transitions from a busy weeknight dinner to a meal-prep lunch.
Heat the olive oil in a medium saucepan over medium heat. Add the chopped yellow onion and cook for 5 minutes, stirring occasionally, until it becomes soft and translucent.
Stir in the minced garlic and ground cumin, cooking for about 30 seconds until highly fragrant. Be careful not to burn the garlic, adjusting the heat down if necessary.
