
This healthy bang bang prawn salad is ready in just 25 minutes and features crispy air-fried prawns tossed in a creamy, spicy dressing. By using the air fryer, you get all the satisfying crunch of traditional fried prawns with a fraction of the oil. It is served over a fresh, crunchy cabbage slaw that makes for a perfect light lunch or quick dinner.
Preheat your air fryer to 400 degrees Fahrenheit (200 degrees Celsius) for 5 minutes and set up a dredging station with three shallow bowls containing the cornstarch, beaten egg, and panko breadcrumbs respectively.
Coat each prawn first in the cornstarch, then dip into the beaten egg, and finally roll in the panko breadcrumbs until they are completely and evenly coated.
Place the coated prawns in a single layer in the air fryer basket, ensuring they do not touch, and spray them lightly with cooking spray to help them brown.
Air-fry at 400 degrees Fahrenheit (200 degrees Celsius) for 8 to 10 minutes, flipping them halfway through and spraying again, until the exterior is beautifully golden brown and crispy.
While the prawns are air-frying, whisk together the light mayonnaise, sweet chili sauce, sriracha, and honey in a medium bowl until the sauce is smooth and creamy.
In a large serving bowl, toss the shredded cabbage mix with half of the prepared bang bang dressing until the greens are lightly and evenly coated.
Divide the dressed cabbage among four plates, top each portion with the warm crispy prawns, drizzle with the remaining dressing, and garnish with sliced green onions and fresh cilantro before serving.
