This easy air fryer patatas bravas recipe is ready in just 20 minutes and delivers perfectly crispy potatoes with a spicy, smoky sauce. By skipping the deep fryer, you get all the crunch of the Spanish classic with much less oil. Serve it hot topped with rich garlic aioli for the ultimate tapas experience.
Wash and peel the potatoes, then cut them into bite-sized 1-inch cubes and pat them completely dry with a clean kitchen towel.
In a large bowl, toss the potato cubes with 1 tablespoon of olive oil, 1/2 teaspoon of smoked paprika, garlic powder, and salt until evenly coated.
Preheat your air fryer to 400°F (200°C). Cook the potatoes in a single layer for 18 to 20 minutes, shaking the basket halfway through, until they are golden brown and crispy.
While the potatoes cook, heat the remaining 1 tablespoon of olive oil in a small saucepan over medium heat, then sauté the onion and garlic for 3 minutes until fragrant and soft.
Stir in the remaining 1/2 teaspoon of smoked paprika, cayenne pepper, tomato paste, and vegetable broth, then simmer on low for 5 minutes until the sauce thickens.
Transfer the crispy air-fried potatoes to a platter, drizzle with the warm spicy tomato sauce, and top with garlic aioli and chopped fresh parsley before serving immediately.
