
This recipe elevates the classic yogurt bowl by featuring warm, maple-roasted peaches layered with cool Greek yogurt and crunchy pecan granola. It creates a delightful balance of temperatures and textures, making it perfect for a slow weekend brunch or a light dessert.
Preheat your oven or toaster oven to 400°F (200°C).
Place the sliced peaches in a small baking dish or on a lined baking sheet.
Drizzle the peaches with one tablespoon of maple syrup and sprinkle evenly with cinnamon.
Roast for 15 minutes, or until the peaches are soft and slightly caramelized. Remove from oven and let cool for 5 minutes.
While the peaches are cooling, whip the Greek yogurt with the vanilla extract (if using) in a small bowl until smooth.
Assemble the parfaits by placing a spoonful of yogurt at the bottom of two serving glasses.
Add a layer of warm roasted peaches, followed by a sprinkle of pecan granola.
