
These quick 30-minute BBQ pork sloppy joes are a family-friendly weeknight dinner that comes together in one skillet. Ground pork is simmered in a sweet and tangy barbecue sauce with bell peppers and onions, then piled high on toasted brioche buns. It is a messy, satisfying meal that kids and adults will love.
Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and cook, breaking it apart with a wooden spoon, until it is mostly browned, which should take about 5 to 6 minutes.
Add the diced onion and green bell pepper to the skillet with the pork. Cook for another 4 to 5 minutes, stirring occasionally, until the vegetables are soft and translucent.
Stir in the minced garlic and cook for about 1 minute until fragrant. Carefully drain any excess fat from the skillet to keep the sauce from becoming too greasy.
