
These quick 30-minute vanilla alfajores are incredibly easy to make and deliver melt-in-your-mouth dulce de leche goodness. By skipping the traditional dough chilling process, we cut down the prep time significantly without losing that classic tender, crumbly texture.
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour and cornstarch until fully combined and lump-free.
In a separate large bowl, beat the softened butter, 1/3 cup powdered sugar, vanilla extract, and egg yolk with a hand mixer until creamy and pale, about 2 minutes.
Add the dry ingredients to the wet mixture and stir with a spatula until a soft, cohesive dough forms, using your hands to gently press it together if needed.
Roll the dough between two sheets of parchment paper to a 1/4-inch thickness, then cut out circles using a 2-inch round cookie cutter.
Place the dough circles 1 inch apart on the prepared baking sheet and bake for 10 to 12 minutes, or until the edges are just set but the tops remain pale.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Spread a tablespoon of dulce de leche on the flat side of half the cookies, sandwich with the remaining cookies, and dust generously with powdered sugar before serving.
