
This rich stout beef and oyster pie recipe creates a hearty British dinner with tender meat and briny seafood in about 2 hours and 30 minutes. The deep flavor of the dark beer gravy perfectly complements the savory beef, while fresh oysters add a luxurious, traditional touch. Preheat your oven to 325°F (160°C). Season the cubed beef generously with salt and pepper, then toss with 2 tablespoons of flour to coat evenly.
Heat the vegetable oil in a large oven-proof pot or Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides, then remove the meat and set it aside.
In the same pot, reduce heat to medium and add the chopped onion. Sauté for about 5 minutes until softened and translucent, then stir in the minced garlic and cook for another minute until fragrant.
Pour in the stout beer and beef broth, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Return the browned beef to the pot along with the thyme and bay leaf.
