A touch of lemon juice and almond extract perfectly elevates the unique, slightly nutty flavor of fresh or frozen Saskatoon berries. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper to catch any spills. Gently unroll one pie crust and press it lightly into the bottom and up the sides of a 9-inch pie dish.
In a large mixing bowl, combine the Saskatoon berries, granulated sugar, cornstarch, lemon juice, almond extract, and ground cinnamon. Toss the mixture gently with a spatula until the berries are evenly coated and no dry cornstarch remains.
