Known traditionally in Albania as Tavë me Presh, this vegetarian dish combines sweet sautéed leeks with tangy feta cheese and a golden egg-and-yogurt crust. Serve it warm alongside crusty bread for a simple, satisfying meal.
Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish with a splash of olive oil.
Heat the olive oil in a large skillet over medium heat, then add the sliced leeks and sauté for 10 to 12 minutes until they are soft, translucent, and slightly sweet, ensuring they do not brown too much.
In a medium bowl, whisk together the beaten eggs, Greek yogurt, crumbled feta cheese, and black pepper until well combined.
Stir the sautéed leeks directly into the egg and cheese mixture until they are thoroughly coated.
