
This easy beef lo mein is ready in just 25 minutes and makes for a perfect, family-friendly weeknight dinner. Tender strips of flank steak are tossed with fresh vegetables and chewy egg noodles in a rich, savory garlic soy sauce. It tastes just like your favorite Chinese takeout but is much healthier and quicker to make at home.
Cook the lo mein noodles in a large pot of boiling water according to the package instructions, then drain and set aside.
In a small bowl, whisk together the soy sauce, dark soy sauce, oyster sauce, and sesame oil to make the savory stir-fry sauce.
Heat one tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering.
Add the sliced beef in a single layer and sear for 2 to 3 minutes until beautifully browned on both sides, then transfer to a plate and set aside.
Add the remaining tablespoon of oil to the same wok, then toss in the broccoli, bell pepper, and carrot, stir-frying for 3 to 4 minutes until tender-crisp.
Reduce the heat to medium, add the minced garlic and grated ginger, and sauté for 30 seconds until highly fragrant, being careful not to burn them.
Return the cooked beef and noodles to the wok, pour the prepared sauce over the top, and toss everything together for 2 minutes until well-coated, hot, and delicious.
