Charcoal-grilled to smoky perfection, they are paired with a bright, raw green onion and herb sauce that cuts through the rich seafood flavor. Preheat your outdoor grill or indoor grill pan to medium-high heat, roughly 400°F (200°C), and lightly oil the grates to prevent sticking.
In a medium bowl, toss the cleaned prawns with two tablespoons of olive oil, smoked paprika, minced garlic, half of the salt, and the black pepper until they are evenly coated.
Prepare the raw green onion sauce by combining the chopped green onions, fresh cilantro, extra-virgin olive oil, lime juice, minced jalapeno, and the remaining salt in a small bowl, stirring well to combine.
