
These easy Bulgarian honey cookies are baked in just 15 minutes and feature warm spices with a sweet chocolate drizzle. Known traditionally as Medenki, these soft-baked treats are perfect for pairing with hot tea or coffee.
In Bulgaria, these honey cookies, or Medenki, are a beloved staple during the winter holidays and family gatherings. Bakers traditionally shape them into small rounds or half-moons, filling the home with the comforting aroma of warm honey and cinnamon. Making them is a wonderful way to bring a touch of Eastern European warmth to your kitchen.
Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. In a large mixing bowl, whisk together the eggs, granulated sugar, vegetable oil, and honey until the mixture is smooth and slightly pale.
In a separate medium bowl, sift together the all-purpose flour, baking soda, ground cinnamon, and ground cloves. Gradually add this dry mixture to the wet ingredients, stirring with a wooden spoon until a soft dough begins to form.
Turn the dough onto a lightly floured surface and gently knead it for about 1 minute until it is smooth and no longer sticky. Pinch off walnut-sized pieces of dough and roll them into smooth balls between your palms.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading. Bake in the preheated oven for 10 to 12 minutes, or until the bottoms are lightly golden and the tops are set but still soft to the touch.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. While they cool, melt the dark chocolate in a heatproof bowl in 30-second bursts in the microwave.
Use a spoon or a small piping bag to drizzle the melted chocolate over the cooled cookies in a decorative pattern. Let the chocolate set completely at room temperature for about 20 minutes before serving these sweet, spiced treats with a warm cup of herbal tea.
