The tender patties are packed with fresh herbs and aromatic spices, perfectly balanced by a cooling homemade tzatziki sauce. In a large mixing bowl, combine the ground lamb, chopped parsley, chopped mint, grated onion, minced garlic, cumin, coriander, cayenne pepper, salt, and black pepper.
Gently mix the ingredients with your hands until just combined, being careful not to overwork the meat to ensure the burgers stay tender.
Divide the mixture into 4 equal portions and shape them into patties about 3/4-inch thick, making a slight indentation in the center of each to prevent bulging.
Preheat a grill or large cast-iron skillet over medium-high heat and lightly oil the grates or pan surface.
