
This easy Filipino bistek is ready in under 35 minutes, delivering tender beef simmered in a savory citrus and soy sauce glaze. It features marinated ribeye or sirloin steaks topped with plenty of sweet, softened onion rings. Serve this comforting dish over hot steamed white rice to soak up the delicious, tangy sauce.
In a medium bowl, combine the soy sauce, calamansi juice, minced garlic, and cracked black pepper to create the marinade. Toss the sliced beef in the mixture until well coated, then let it marinate at room temperature for 15 minutes.
Heat one tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the onion rings and sauté for 2 to 3 minutes until they are slightly softened but still retain a bit of crunch, then transfer them to a plate and set aside.
In the same skillet, heat the remaining tablespoon of cooking oil over high heat. Remove the beef from the marinade, shaking off excess liquid, and sear the meat in a single layer for 1 to 2 minutes per side until beautifully browned.
Pour the remaining marinade and half a cup of water into the skillet with the beef, bringing the liquid to a gentle boil. Reduce the heat to low, stir in the brown sugar, and simmer for 8 to 10 minutes until the sauce reduces slightly and the beef is melt-in-your-mouth tender.
Return the sautéed onion rings to the skillet, tossing them gently with the beef and sauce for 1 minute to warm through. Serve immediately over a generous bed of steamed white rice, spooning the savory citrus sauce over the top.
