
This rustic Greek Gigantes Plaki is ready in just 50 minutes and offers a healthy, comforting Mediterranean meal. Giant butter beans are baked in a rich, herb-infused tomato sauce with a generous drizzle of olive oil. Serve it hot with crusty bread and crumbled feta cheese for the ultimate cozy dinner.
Preheat your oven to 375°F (190°C). Heat 2 tablespoons of the extra-virgin olive oil in a large oven-safe skillet or Dutch oven over medium heat.
Add the finely chopped onion to the skillet and cook for 5 to 6 minutes, stirring occasionally, until soft and translucent. Stir in the minced garlic and cook for another 1 minute until fragrant.
Add the tomato paste, dried oregano, and smoked paprika to the pan, stirring constantly for 2 minutes to caramelize the paste. Pour in the crushed tomatoes and water, bringing the mixture to a gentle simmer.
Gently fold the drained butter beans into the tomato sauce, taking care not to break them. Season with salt and black pepper to taste, then stir in half of the chopped fresh parsley.
Transfer the skillet uncovered to the preheated oven and bake for 35 to 40 minutes. The dish is done when the sauce has thickened, bubbled, and caramelized slightly around the edges.
